Cilantro Coconut Chutney
Yield: 1 quart
Shelf Life: Keeps in the refrigerator for 3 days (loses color after 3 days).
Ingredients:
● 3 cilantro bunches (leaves only, stems reserved for tea or stock)
● 1 cup coconut flakes, blended
● 1/2 tsp ginger, minced
● 1/2 cup lemon juice
● 1/8 tsp pink salt
● 1/2 tsp honey
Method:
Place coconut in Robot Coupe/food processor, blend for 1 minute, and transfer to a bowl.
Place ginger, lemon juice, salt, and honey in Robot Coupe/food processor. Blend for 1 minute; add the cilantro and blend for 1 additional minute.
Add mixture to ground coconut and stir to combine.
