Pharm Table has been one of the most adaptive restaurants on this list, changing at every opportunity to suit its environment, to suit its market, to suit chef and owner Elizabeth Johnson’s mission of advancing food in the name of mindful eating in a garden bistro setting. Their new Rasas menu is a four-course exploration of that mission, and it might start with a mezze plate of cashew labneh and a housemade dosa and move through beet spring rolls with salsa macha, tandoori salmon and sticky date cake with strawberries before it’s over. Beverage director Nathan White’s repertoire includes a blushing tokaji wine from Hungary, a five-year Madeira and a natural sparkler from France. Pharm Table even has its own food fermentation specialist in chef Edward Barrera.
